Guests can indulge in his winning recipes such as pan-roasted foie gras with pumpkin foam, sprouts, amaretti and balsamic reduction; foie gras soft potato gnocchi with chanterelle mushroom sugo and black truffle; and breast of free range duck with burrata, grape compote and roasted roots. For dessert, chocolate foie gras mousse with foie gras ice cream and fi g brûlée is not to be missed.
